Low-Carb Meat Loaf

It almost feels silly making a recipe for meat loaf. I feel like meat loaf is one of the first foods that I ever learned to make, so turning it into low-carb was pretty much a first-step to dietary changes. The only real difference to this meat loaf and my higher carb reasons is the type of ketchup and lack of any bread crumbs (which half the time I skipped anyways).

Ingredients
1 lb Regular Ground Beef
1 Egg
1 tbsp Yellow Mustard
4 tbps no sugar added ketchup
Salt and pepper
1 tsp each garlic powder and onion powder
Directions
- Preheat oven to 350° F
- Mix ground beef, egg, mustard, salt/pepper, and onion/garlic powders in a pan or bowl (I do it right in the dish I’m cooking in)
- Spread out as a loaf in pan (I don’t find it needs to be greased due to the high fat)
- Spread no sugar added ketchup on top of the meat loaf then sprinkle salt and pepper; if you find the ketchup bitter you can mix a low-carb sweetener like stevia, splenda, etc in the ketchup
- Bake for 45 minutes
