Chicken (or) Shrimp Fettucine Alfredo

Strangely enough, before Keto I wasn’t the world’s biggest fan of alfredo. For the most part I had only really used it from a jar, which is probably something that should never have existed in the first place. A few weeks into Keto I decided that I was craving cheese and pasta, and I didn’t have anything resembling Macaroni, so this recipe happened.

And yes, that’s a paper plate. Our sink leaks whenever I use the dishwasher right now, so paper has been a life saver.

Ingredients

  • Half a package of Liviva Fettucine Pasta

  • 1/2 Cup diced chicken or full shrimp

  • 1/2 Cup Mozzarella

  • 1/4 Cup Parmesean

  • 1/2 Cup Whipping Cream

  • 1 tbsp carbquick OR almond flour

  • 1 Tbsp Butter

  • 1 tsp each chili powder, onion powder, garlic powder

  • Pinch of salt and pepper

Directions

  • Melt butter in pot
  • Melt mozzarella and parmesean cheese on burner at low-medium heat
  • After fully melted, add whipping cream and carbquik or almond flour, spices, salt/pepper and stir until a consistent cream
  • Cook pasta in another pot with package directions (takes about 4 minutes total)
  • Cook chicken or shrimp in air fryer or pan; spice as desired (I find the shrimp really good with chili powder)
  • Mix everything together in pot or pan and then serve


The key to how delicious this pasta is is the fettucine by Liviva, which is often at supermarkets and also on Amazon. It’s 5 net carbs per 1/4 package and is a decent helping especially when you’re going to be using it for an entire meal.
