DIY Imititation Crab

The author, due to an allergy to lobster and crab, embarked on a quest to find a DIY imitation crab recipe suitable for a low-carb diet. After researching and experimenting with ingredients, the author successfully created a ‘fishy’, less rubbery, imitation crab, made palatable by incorporating xantham gum, which was ultimately used in making low-carb California Rolls.
